Easy, Delicious Parmesan Salad
Tell me the truth… Has the increase in the price of groceries as of late been affecting your families as much as it has been affecting mine? Due to the rising costs of groceries, I find myself challenged with finding ways to still incorporate fresh fruits and vegetables into my family's diet, but at less of a cost. So, finding a way to use less ingredients in a recipe while keeping an amazing flavor that everyone can enjoy is my goal. This salad accomplished just that! It is only 5 ingredients, it is fresh and tasty, and is healthy. Most importantly its cost effective. You must give this one a try!

What You Need
- 3 romaine hearts chopped finely
- 5-6 small English cucumbers chopped
- ½ cup extra virgin olive oil
- 1 cup finely grated parmesan cheese
- ½ cup of lemon juice, from 2-3 lemons
- Kosher salt and pepper to taste
What You Will Do
- Clean and chop the romaine hearts and place into mixing bowl.
- Cut up the cucumbers and place into the bowl.
- Add parmesan and toss to coat thoroughly.
- In a separate bowl whisk together the extra virgin olive oil and lemon juice.
- Drizzle the lemon juice and olive oil over the salad.
- Season with salt and pepper and toss to coat.
- Serve immediately!

- This will stay in the refrigerator overnight in an airtight container.
